A Type I hood collects grease, smoke, and vapors, it's required over fryers, griddles, charbroilers, and ranges. A Type II hood only handles steam and heat with no grease present, it covers equipment like ovens under 250°F or dishwashers. Installing the wrong type, or sizing it off the wrong equipment table, is one of the most common reasons a mechanical plan gets rejected. Exhaust CFM is calculated per linear foot of hood, and the rate depends on both the hood style (canopy, backshelf, eyebrow) and the duty level of the heaviest equipment underneath it. When equipment of different duty levels shares a hood, the whole hood is sized to the heaviest one present, not an average. How duty level works when equipment is mixed under one hood
When different types of cooking equipment sit under the same hood, the entire hood is sized using the formula for the single highest (heaviest) duty level present. A hood over a gas charbroiler, fryer, and range, for example, is sized using the charbroiler's heavy-duty table, even though the fryer and range are lighter duty on their own.

Equipment marked I+ (solid fuel) always needs its own separate, dedicated exhaust duct and fan, it cannot share ductwork with other equipment.
Exhaust CFM & Duct Sizing

Exhaust CFM = Airflow rate (CFM per linear foot) × Hood length. Duct area is sized from that CFM at a target duct velocity.

Dishwashing uses a flat rate regardless of duty level.
If length exceeds 12 ft, two discharge ducts are required from the hood to the main duct.
Switch to custom size if you already have a duct in mind, an existing run, or a fabricator's minimum, and just need to check the resulting velocity.
Must be 500–2,500 FPM for Type I ducts. ~1,800 FPM is a common design target.
A round duct needs the smallest space. If rectangular, keep it as close to square as possible.

Based on a maximum of 2,000 CFM per diffuser. Make-up air should supply 95–100% of exhaust CFM, and the exhaust and make-up air systems must be electrically interlocked so one cannot run without the other.

Worked example (from the county guideline)
A hood needs a minimum airflow of 3,250 CFM. Baffle filters are 16" × 20" nominal, with an actual filtering surface of 14" × 18" (252 sq in, or 1.75 sq ft), and an optimum operating velocity of 360 FPM.

Filter area needed = 3,250 ÷ 360 = 9.03 sq ft.
Filters required = 9.03 ÷ 1.75 = 6 filters, rounded up to make sure the installed filter area meets the minimum, not down.

(The county's own 2019 published example rounds this to 5, but 5 filters only provides 8.75 sq ft of coverage, short of the 9.03 sq ft the same worksheet calculates as the minimum. This calculator rounds up so the result always meets or exceeds the required area.)

  • Mixing duty levels under one hood. A charbroiler and a range under the same hood get sized to the charbroiler's heavier table, not averaged or split.Mezclar niveles de servicio bajo una campana. It depends on the duty level of the cooking equipment and the hood style. A wall-mounted canopy over medium-duty equipment needs 300 CFM per linear foot, for example, while the same equipment under an eyebrow hood needs 250. Type I duct systems must maintain an air velocity between 500 and 2,500 feet per minute. Too slow and grease condenses and collects inside the duct, creating a fire hazard.
