Cooling Time TrackerRastreador de Tiempo de Enfriamiento

Log the start time and temperature readings for a batch and see your deadlines, a live countdown, and whether the batch cooled in time.

The RuleLa Regla

Two Stages, Six Hours at MostDos Etapas, Seis Horas como Máximo

Under the California Retail Food Code, cooked hot food has to cool from 135°F to 70°F within 2 hours, and then to 41°F or below within the remaining time, for a total of no more than 6 hours. Prepared ready-to-eat food that starts at 70°F or below has to reach 41°F within 4 hours.

Ways to Cool FasterFormas de Enfriar Más Rápido

Shallow pansCharolas poco profundas

Spread food in containers no more than 4 inches deep, uncovered or loosely covered while it cools.

Divide into portionsDivida en porciones

Smaller or thinner portions cool much faster. Cook and cool in small batches when you can.

Ice bath and stirringBaño de hielo y agitar

Set the container in an ice water bath and stir often, or use an ice paddle.

Ice as an ingredientHielo como ingrediente

For soups and sauces, make part of the liquid as ice and add it after cooking.

A quick-chill unit is built for this job and is the most reliable option for large volumes.

Don't use the walk-in aloneNo use solo la cámara

A deep stockpot placed in a walk-in can stay warm in the center for hours, so cool it down first.

Frequently Asked QuestionsPreguntas Frecuentes

Why 70°F in two hours?¿Por qué 70°F en dos horas?

Food spends the most time in the range where bacteria multiply fastest, roughly 125°F down to 70°F. Getting through that range quickly is what keeps the food safe, so the first stage is the shorter one.

What if a batch misses a limit?¿Qué pasa si un lote no cumple un límite?

What temperatures should a cooler and hot-holding unit keep?¿Qué temperaturas deben mantener un refrigerador y una unidad de mantenimiento en caliente?

Cold holding is 41°F or below and hot holding is 135°F or above. Cooling is the step between the two.
